Lemons, Limes, Pies and a Wickedly Delicious Martini

Baking up a storm is in my blood and I have a weakness for all baked goods, cakes, pies, doughnuts, cookies and coffee cake.  Today’s post, all about pie.

My grandmother used to make the most delicious lemon meringue pie and at a young age it was such a marvel to me that an egg could turn in to a creation so light and airy as meringue.  I have found several fabulous recipes, but this one made me catch my breath for just a moment.  This is from a site called BonBon Break, the site name itself is wickedly delicious.  The recipe was written by Suzanne Cowden and is absolutely phenomenal.

A delicious pre-baked pine nut crust gently cradles the filling, made with freshly squeezed lemons and limes,  and topped with a light and slightly torched meringue.

Sticking with the cream pie theme, the delectable Key Lime Pie is next.  I have to be honest, I have never had Key Lime Pie, and I am very eager to try my first one.  Saveur Mag has a very tempting recipe that is definitely on my menu.   The shopping list is basic; graham cracker crumbs, butter, granulated sugar, lime zest, egg yolks, condensed milk, Key lime juice, heavy cream and confectioners sugar.

While on the search for a great Key Lime recipe, I found this little gem over at Coastliving.com and I simply could not resist this tempting libation.  While you are over on their site poking around, check out their pie and dessert recipes.

Key Lime Pie Martini

  • Honey
  • Graham cracker crumbs
  • 4 tablespoons vanilla flavored vodka
  • 2 tablespoons Key lime juice
  • 2 tablespoons simple syrup
  • 1/3 cup heavy cream
  • ½ cup ice
  • Cinnamon stick
  • Lime wedge

Line the rim of a martini glass with honey and dip into graham cracker crumbs, coating the rim with crumbs. Combine vodka and next 4 ingredients in a martini shaker. Shake until very cold. Strain into a martini glass. Garnish with cinnamon stick and lime wedge. Makes 1 serving.
