Balsamic Blueberry Goat Cheese Crostinis
Ingredients

- 1 baguette, sliced into 1/4-inch rounds
- 2-3 tablespoons olive oil
- Salt, to taste
- For the Balsamic Blueberries:
- 1 cup fresh blueberries
- 2 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon fresh thyme leaves
- Pinch of salt
- For the Goat Cheese Spread:
- 4 ounces goat cheese, softened
- 2 tablespoons heavy cream (or milk)
- 1 tablespoon honey
- 1 teaspoon lemon zest
- Freshly ground black pepper, to taste
- Garnish:
- Fresh thyme leaves or microgreens
Instructions
- Prepare the Crostinis:
- Preheat your oven to 375°F (190°C).
- Arrange the baguette slices on a baking sheet. Brush each slice lightly with olive oil and sprinkle with a pinch of salt.
- Bake for 10-12 minutes, or until the crostinis are golden and crisp. Remove from the oven and let cool.
- Prepare the Balsamic Blueberries:
- In a small saucepan, combine the blueberries, balsamic vinegar, honey, thyme leaves, and a pinch of salt.
- Cook over medium heat, stirring occasionally, until the blueberries begin to soften and release their juices, about 5-7 minutes.
- Remove from heat and let the mixture cool slightly.
- Prepare the Goat Cheese Spread:
- In a small bowl, mix the softened goat cheese with the heavy cream, honey, lemon zest, and a pinch of freshly ground black pepper until smooth and creamy. Adjust the consistency with more cream if needed.
- Assemble the Crostinis:
- Spread a generous amount of the goat cheese mixture onto each crostini.
- Top with a spoonful of balsamic blueberries.
- Garnish with fresh thyme leaves or microgreens for an extra touch of color and flavor.
