  • 2 tbsp rice vinegar or apple cider vinegar
  • 2 tbsp water
  • 2 garlic cloves, finely minced
  • 1 tsp fresh ginger, grated
  • ½ tsp sesame oil (optional, for depth)
  • ½ tsp chili flakes (optional, for heat)
  • 1 tsp cornstarch mixed with 1 tbsp cold water (slurry, for thickening)

  1. Prepare the Pork Fillet:
    • Preheat your oven to 375°F (190°C).
    • Pat the pork fillet dry with paper towels. Season with salt and pepper on all sides.
    • Heat olive oil in a large, oven-safe skillet over medium-high heat. Sear the pork fillet for 2-3 minutes on each side until golden brown. Remove from heat.
  2. Make the Honey Soy Glaze:
    • In a small bowl, whisk together soy sauce, honey, rice vinegar, water, garlic, ginger, sesame oil, and chili flakes.
    • Pour the glaze into the skillet with the pork. Spoon some over the fillet to coat.
  3. Roast the Pork:
    • Transfer the skillet to the preheated oven. Roast for 12-15 minutes, or until the internal temperature of the pork reaches 145°F (63°C) for medium doneness.
    • Baste the pork with the glaze once halfway through roasting.
  4. Thicken the Glaze (Optional):
    • Remove the pork from the skillet and let it rest on a cutting board for 5 minutes.
    • Place the skillet back on the stovetop over medium heat. Stir the cornstarch slurry into the glaze and simmer for 1-2 minutes until thickened.
  5. Serve:
    • Slice the pork into medallions and drizzle with the thickened glaze.
