Instructions

In a bowl, whisk together olive oil, lime zest and juice, garlic, cilantro, salt, pepper, and red pepper flakes. Coat the sirloin evenly and let marinate at room temperature for 20–30 minutes.

Cook the rice according to package instructions. Once finished, fluff with a fork and stir in olive oil, lime juice, cilantro, and a pinch of salt. Set aside.

Heat a cast-iron or heavy skillet over medium-high heat. Sear the steak for 3–4 minutes per side, until a deep crust forms and the internal temperature reaches about 130–135°F for medium-rare. Remove from heat and rest for 5 minutes before slicing against the grain.

To assemble, spoon cilantro-lime rice into bowls. Add sliced steak, avocado, tomatoes, and red onion. Finish with scattered cilantro and an extra squeeze of lime if desired.
