Cilantro-Lime Sirloin Steak Bowl Recipe

Ingredients
- 1 lb sirloin steak
- 2 tbsp olive oil
- Zest and juice of 1 lime
- 2 garlic cloves, minced
- ยผ cup fresh cilantro, finely chopped (plus extra for garnish)
- ยฝ tsp kosher salt
- ยผ tsp freshly cracked black pepper
- ยผ tsp red pepper flakes (optional)
For the rice
- 1 cup jasmine or long-grain white rice
- 1 tbsp olive oil
- Juice of ยฝ lime
- 2 tbsp chopped cilantro
- Pinch of salt
For the bowl
- 1 ripe avocado, sliced
- 1 cup cherry tomatoes, halved
- ยผ red onion, thinly sliced
Instructions
In a bowl, whisk together olive oil, lime zest and juice, garlic, cilantro, salt, pepper, and red pepper flakes. Coat the sirloin evenly and let marinate at room temperature for 20โ30 minutes.
Cook the rice according to package instructions. Once finished, fluff with a fork and stir in olive oil, lime juice, cilantro, and a pinch of salt. Set aside.
Heat a cast-iron or heavy skillet over medium-high heat. Sear the steak for 3โ4 minutes per side, until a deep crust forms and the internal temperature reaches about 130โ135ยฐF for medium-rare. Remove from heat and rest for 5 minutes before slicing against the grain.
To assemble, spoon cilantro-lime rice into bowls. Add sliced steak, avocado, tomatoes, and red onion. Finish with scattered cilantro and an extra squeeze of lime if desired.
