Grilled Cod and Mango Salsa Tacos
Serves 4 (2 tacos per serving)
Ingredients
For the Mango Salsa:
- 1 large ripe mango, peeled and diced
- 1/4 cup red onion, finely chopped
- 1/2 cup watermelon, diced
- 1 small jalapeño, seeded and finely chopped (adjust to taste for spice)
- 1/4 cup chopped cilantro
- 1 lime, juiced
- Salt to taste
For the Grilled Cod:
- 4 cod fillets (whole or large chunks)
- 2 tablespoons olive oil
- 1 teaspoon chili powder
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 8 soft flour tortillas
Directions:
- Prepare the Mango Salsa:
- In a medium bowl, combine diced mango, red onion, watermelon, jalapeño, and chopped cilantro.
- Add lime juice and salt, then toss gently to mix. Adjust the seasoning as needed. Set aside to let the flavors meld.
- Grill the Cod:
- Preheat your grill to medium-high heat.
- Pat the cod fillets dry with paper towels. Brush each fillet with olive oil and season with chili powder, garlic powder, salt, and pepper.
- Place the cod on the grill and cook for about 4-5 minutes per side or until the fish flakes easily with a fork and has a slight char.
- Remove the cod from the grill and let it rest for a few minutes. Then, if desired, break into large chunks for easier taco assembly.
- Warm the Tortillas:
- Wrap the tortillas in aluminum foil and place them on the grill for about 1-2 minutes on each side or until they are warm and pliable.
- Assemble the Tacos:
- On each tortilla, lay a portion of the grilled cod. Top with a generous spoonful of mango salsa.
- Serve immediately, garnished with extra cilantro if desired.
