Grilled Cod and Mango Salsa Tacos

A Refreshing Twist on Taco Night

Serves 4 (2 tacos per serving)

Ingredients

For the Mango Salsa:

  • 1 large ripe mango, peeled and diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup watermelon, diced
  • 1 small jalapeรฑo, seeded and finely chopped (adjust to taste for spice)
  • 1/4 cup chopped cilantro
  • 1 lime, juiced
  • Salt to taste

For the Grilled Cod:

  • 4 cod fillets (whole or large chunks)
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • 8 soft flour tortillas

Directions:

  1. Prepare the Mango Salsa:
    • In a medium bowl, combine diced mango, red onion, watermelon, jalapeรฑo, and chopped cilantro.
    • Add lime juice and salt, then toss gently to mix. Adjust the seasoning as needed. Set aside to let the flavors meld.
  2. Grill the Cod:
    • Preheat your grill to medium-high heat.
    • Pat the cod fillets dry with paper towels. Brush each fillet with olive oil and season with chili powder, garlic powder, salt, and pepper.
    • Place the cod on the grill and cook for about 4-5 minutes per side or until the fish flakes easily with a fork and has a slight char.
    • Remove the cod from the grill and let it rest for a few minutes. Then, if desired, break into large chunks for easier taco assembly.
  3. Warm the Tortillas:
    • Wrap the tortillas in aluminum foil and place them on the grill for about 1-2 minutes on each side or until they are warm and pliable.
  4. Assemble the Tacos:
    • On each tortilla, lay a portion of the grilled cod. Top with a generous spoonful of mango salsa.
    • Serve immediately, garnished with extra cilantro if desired.
