  1. Moisture and Starch Inside the Kernel: Each popcorn kernel contains a small amount of water stored inside a circle of soft starch. The kernel’s outer shell, known as the hull, is both hard and impermeable to water.
  2. Heating the Kernel: When you heat popcorn kernels, the water inside begins to turn into steam, which builds pressure inside the kernel.
  3. Pressure Build-up and Expansion: As the temperature rises, the water turns into steam, and the pressure inside the kernel increases. The starch inside the kernel begins to soften and become pliable due to the heat.
  4. Popping: When the pressure inside the kernel reaches about 135 psi (pounds per square inch) and the temperature hits around 180°C (356°F), the hull can no longer contain the pressure, and the kernel explodes.
  5. Starch Explosion and Cooling: Upon exploding, the soft starch inside the kernel bursts out, inflating and cooling rapidly. The rapid cooling causes the starch to expand and solidify into the characteristic foam-like structure, creating popped popcorn.
