This autumn inspired pierogies dish is simple, tasty, and your new ally in the battle against time. With only 40 minutes start to finish and a small window of 10 minutes pep time – this gives you 30 golden minutes to whip up companion dishes or to prep the kids for practice or other school night activities.

Roasted Sweet Potatoes Brown Butter Pierogies

  • 1 bag (1.6 pounds) Mrs. T’s Mini Classic Cheddar Pierogies
  • 2 cups sweet potato cubes (About 1 large or 2 medium sweet potatoes, cut into 1/2-inch cubes)
  • 1 tablespoon olive oil
  • Salt & pepper to taste
  • 4 tablespoons salted butter
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons lemon juice
  • Enough water for boiling
  • 1/2 cup pecans
  • Fresh thyme leaves, for garnishing


  1. Roasting the Sweet Potatoes
    Preheat your oven to 400 F. Gently mix the sweet potato cubes with olive oil, salt, and pepper, ensuring even coverage. Spread them on a baking sheet and roast for 25-30 minutes. Stir once midway, and cook until they’re soft and tender.
  2. Perfecting the Brown Butter
    In a skillet, melt and brown the butter over medium heat (5-10 minutes). Be watchful to prevent it from burning. Take it off the heat, cool for 5 minutes, and then blend in the balsamic vinegar and lemon juice.
  3. Pierogies in Brown Butter
    In a spacious saucepan, bring water to a boil. Add the pierogies and cook as per package instructions (typically around 3 minutes). Once done, drain the water and mix the pierogies in the brown butter sauce.
  4. Bringing it all Together
    To this mix, introduce the roasted sweet potatoes and pecans, stirring gently.
  5. Serve with Style
    Pour out your creation into serving dishes and sprinkle fresh thyme leaves on top. Enjoy!
