Roasted Red Pepper Hummus

Ingredients
- 1 large red bell pepper
- 2 cups (about 1 can) cooked chickpeas, drained and rinsed
- 3 cloves garlic, chopped
- 1/4 cup tahini
- Juice of 1 lemon
- 1/4 cup Colavita extra virgin olive oil (divided)
- 1/2 tsp smoked paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- Fresh herbs: parsley or cilantro (optional)
- Water or aquafaba (chickpea water) as needed for consistency

Instructions
- Roast the Red Peppers: Preheat your oven to 450°F. Slice the bell pepper in half, remove the seeds, and place it skin side up on a baking sheet. Drizzle with a tablespoon of Colavita olive oil. Roast for 20-25 minutes or until the skin is charred. Let cool, then peel off the skins.
- Prepare the Hummus Base: In a food processor, combine the chickpeas, roasted peppers, garlic, tahini, lemon juice, smoked paprika, cumin, and a pinch of salt. Begin blending.
- Incorporate Olive Oil: With the food processor running, slowly drizzle in the remaining olive oil. Add water or aquafaba one tablespoon at a time to reach your desired creamy consistency. Taste and adjust seasoning with more salt, lemon, or spices as needed.
- Finish & Serve: Scoop the hummus into a serving bowl and garnish with fresh chopped parsley or cilantro, a drizzle of olive oil, and a sprinkle of smoked paprika. Serve with crostini, pita bread, or sliced vegetables.
Storage Tips
- Store the hummus in an airtight container in the refrigerator for up to 5 days.
- To keep it fresh, add a layer of olive oil on top before sealing.
