Spinach & Cheese Stuffed Chicken Breast


Ingredients

For the Chicken:

  • 2 large boneless, skinless chicken breasts (Farm Fresh Northwest recommended)
  • Salt & pepper
  • 1 Tbsp olive oil or melted butter
  • Toothpicks or butcher’s twine (for securing)

For the Filling:

  • 1 cup fresh spinach (or frozen, drained well)
  • 1 clove garlic, minced
  • 1 tsp olive oil
  • 1/3 cup cream cheese (softened)
  • 1/4 cup shredded mozzarella
  • 2 Tbsp grated Parmesan
  • Pinch of crushed red pepper (optional)

Instructions

  1. Prepare the Filling:
    In a skillet over medium heat, sauté spinach and garlic in 1 tsp olive oil just until wilted. Remove from heat. Stir in cream cheese, mozzarella, Parmesan, and a pinch of pepper flakes. Mix until smooth and let cool slightly.
  2. Prep the Chicken:
    Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through. Gently open each breast like a book and season the inside with salt and pepper.
  3. Stuff & Secure:
    Spoon the filling evenly into each pocket. Fold the chicken closed and secure with toothpicks or butcher’s twine to hold the filling in.
  4. Sear & Bake:
    Preheat oven to 375°F. Heat 1 Tbsp olive oil or butter in an oven-safe skillet over medium-high heat. Sear chicken 2–3 minutes per side until golden brown. Transfer skillet to oven and bake for 15–18 minutes, or until internal temp reaches 165°F.
  5. Rest & Serve:
    Let rest 5 minutes. Remove toothpicks or twine and slice for serving.
