Cinco de Mayo, the Fifth of May is on a Monday this year, so celebrations will begin Friday and continue through the weekend. The menu? Festive and fabulous Mexican inspired cuisine. This recipe is basic and the best thing about “basic” is that ingredients can be added or subtracted to suite your taste.
