Cinco de Mayo, the Fifth of May is on a Monday this year, so celebrations will begin Friday and continue through the weekend. The menu? Festive and fabulous Mexican inspired cuisine. If you are throwing a celebration this weekend with a “South of the Border Flair”, I hope you will find a few recipes this week that inspire you to create some delicious dishes.
Chili Colorado ( Red Chili Sauce ) by Pass the Sushi. This is a serious dish that takes some time and a bit of concentration. It’s also completely worth the effort involved. Except for the peppers, you more than likely already have these items in your pantry, and your local grocer should be well stocked with these “warm” little gems, given the 5th of May is right around the corner. This recipe is basic and the best thing about “basic” is that ingredients can be added or subtracted to suite your taste.
