Summer Strawberry and Citrus Salad with Balsamic Vinaigrette
Ingredients

Balsamic Vinaigrette Dressing
- 1/2 cup Olive oil
- 1/3 cup Balsamic vinegar
- 2 teaspoons Maple syrup
- 1 teaspoon Dijon mustard
- Salt/Pepper – to taste
Salad
- 3 cups Baby spinach & butter lettuce, or any combination of your favorite greens
- Balsamic Vinaigrette Dressing for drizzling
- 1/4 cup Mandarin oranges, optional
- 1/4 cup Grapefruit slices
- 1/2 cup Strawberries, hulled and sliced
- 1/4 cup Walnuts, optional
- 3 Tbsp Goat cheese, crumbled
- Sprig of thyme
Directions
Balsamic Vinaigrette Dressing
- Whisk together oil, vinegar, maple syrup, mustard, salt and pepper until fully combined.
- Set aside.
Assemble your salad
- Lay down a bed of greens on each plate.
- Layer remaining ingredients, toss in your crumbled goat cheese and drizzle with Vinaigrette.
