Lemony Pasta with Peas and Asparagus
Ingredients
- 12 ounces spaghetti pasta, or pasta of your choice
- 1 cup fresh peas
- 1 cup young asparagus tips, trimmed
- 2 tablespoons lemon-infused Terra Delyssa organic extra virgin olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon lemon zest
- Salt and black pepper, to taste
- Freshly grated Parmesan cheese
- Fresh basil leaves, for garnish
Instructions
- Fill a large pot with salted water and bring it to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
- In the same pot, blanch the peas and asparagus tips in boiling water for 2 minutes. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a large skillet, heat the lemon-infused Terra Delyssa olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the blanched peas and asparagus to the skillet. Sauté for an additional 2-3 minutes until they are tender-crisp.
- Toss the cooked pasta into the skillet with the vegetables. Add the lemon zest, salt, and black pepper. Stir everything together gently until the pasta is well coated and heated through.
- Remove the skillet from the heat and transfer the pasta to serving plates or a large serving dish.
- Garnish with freshly grated Parmesan cheese and fresh basil leaves.
