Honey Soy-Glazed Pork Fillet
Ingredients
For the Pork Fillet:
- 1 lb (450g) pork fillet (tenderloin), trimmed of excess fat
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp freshly ground black pepper
For the Honey Soy Glaze:
- ⅓ cup soy sauce (low-sodium recommended)
- ¼ cup honey
- 2 tbsp rice vinegar or apple cider vinegar
- 2 tbsp water
- 2 garlic cloves, finely minced
- 1 tsp fresh ginger, grated
- ½ tsp sesame oil (optional, for depth)
- ½ tsp chili flakes (optional, for heat)
- 1 tsp cornstarch mixed with 1 tbsp cold water (slurry, for thickening)

For Garnish:
- Fresh parsley or cilantro, roughly chopped
- Sesame seeds (optional)
Instructions
- Prepare the Pork Fillet:
- Preheat your oven to 375°F (190°C).
- Pat the pork fillet dry with paper towels. Season with salt and pepper on all sides.
- Heat olive oil in a large, oven-safe skillet over medium-high heat. Sear the pork fillet for 2-3 minutes on each side until golden brown. Remove from heat.
- Make the Honey Soy Glaze:
- In a small bowl, whisk together soy sauce, honey, rice vinegar, water, garlic, ginger, sesame oil, and chili flakes.
- Pour the glaze into the skillet with the pork. Spoon some over the fillet to coat.
- Roast the Pork:
- Transfer the skillet to the preheated oven. Roast for 12-15 minutes, or until the internal temperature of the pork reaches 145°F (63°C) for medium doneness.
- Baste the pork with the glaze once halfway through roasting.
- Thicken the Glaze (Optional):
- Remove the pork from the skillet and let it rest on a cutting board for 5 minutes.
- Place the skillet back on the stovetop over medium heat. Stir the cornstarch slurry into the glaze and simmer for 1-2 minutes until thickened.
- Serve:
- Slice the pork into medallions and drizzle with the thickened glaze.
- Garnish with parsley or cilantro and sesame seeds, if desired.
Chef’s Tips & Tricks
- Selecting the Pork: Look for pork fillet with a pinkish-red color and a fine texture. Avoid cuts with pale coloring or an excessive amount of liquid in the packaging.
- Perfect Searing: Ensure the skillet is hot before adding the pork to achieve a beautiful golden crust.
- Resting the Meat: Always let the pork rest for a few minutes after cooking to allow the juices to redistribute, keeping the meat tender and juicy.
- Adjusting Sweetness: If you prefer a less sweet glaze, reduce the honey by 1 tablespoon and increase the vinegar slightly.
- Gluten-Free Option: Use gluten-free soy sauce or tamari for a gluten-free dish.
Side Dish Pairing
- Rice: Serve with jasmine or basmati rice to soak up the flavorful glaze.
- Vegetables: Pair with steamed broccoli, sautéed green beans, or a medley of roasted root vegetables.
- Salad: A light Asian-style salad with shredded cabbage, carrots, and sesame dressing complements the dish beautifully.
Variations
- Spicy Kick: Add 1-2 tsp of Sriracha or sambal oelek to the glaze for a spicier flavor profile.
- Citrus Twist: Include 1 tbsp of orange or lime juice for a fresh citrusy note.
- Herbaceous Touch: Add fresh thyme or rosemary to the skillet during roasting for an aromatic twist.
