Ingredients (Serves 2)

For the Burgers

  • 1 lb ground beef (80/20)
  • Salt & cracked pepper to taste
  • 2 brioche or sesame seed buns
  • 2 large eggs
  • ½ cup oyster or cremini mushrooms, thinly sliced
  • 2 tsp butter or olive oil (for mushrooms)
  • 2 slices thick-cut bacon
  • ½ small red onion, thinly sliced
  • ½ cup microgreens (arugula, radish, or mustard)
  • 1 Tbsp mayonnaise (optional)

For the Beet Ketchup

  • 1 small roasted beet, peeled & pureed
  • 3 Tbsp ketchup
  • 1 tsp apple cider vinegar
  • ½ tsp sugar
  • Pinch of salt

Instructions

1. Make the Beet Ketchup:

In a small bowl, combine pureed beet, ketchup, vinegar, sugar, and salt. Mix well and chill until ready to use.

2. Prepare the Toppings:

  • Sauté mushrooms in butter or olive oil over medium heat for about 5 minutes, until browned and tender.
  • Fry bacon until crisp. Drain on paper towel.
  • Fry eggs sunny-side up or over-medium, keeping yolks runny for that signature drip.

3. Form & Cook Patties:

  • Divide beef into 2 equal portions and gently shape into patties.
  • Season both sides with salt and pepper.
  • Grill or sear in a skillet over medium-high heat for 4–5 minutes per side, until medium-rare to medium.
  • Rest for 3 minutes.

4. Toast Buns:

Butter cut sides lightly and toast until golden on grill or skillet.

5. Assemble the Burger:

  1. Spread beet ketchup on bottom bun.
  2. Add pickled red onions.
  3. Place the beef patty.
  4. Top with sautéed mushrooms, crispy bacon, and fried egg.
  5. Add microgreens and top bun. Skewer to hold.

Serve With
