Smoked Salmon Bites with Dill & Capers
Ingredients (Serves 8-10 as an appetizer)
- 1 French baguette, sliced into 20 thin rounds
- 8 oz (225 g) cream cheese, softened
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh dill, finely chopped (plus extra sprigs for garnish)
- 6 oz (170 g) smoked salmon, cut into small strips
- 2 tbsp capers, rinsed and drained
- 5-6 black olives, thinly sliced
- 1 tbsp olive oil (optional, for brushing bread)
- Salt and freshly ground black pepper to taste

Instructions
- Prepare the Bread:
- Preheat the oven to 375°F (190°C).
- Arrange the baguette slices on a baking sheet. Brush with a light coating of olive oil if desired.
- Toast for 6-8 minutes until golden and crisp. Let cool.
- Make the Cream Cheese Spread:
- In a bowl, mix the softened cream cheese with lemon juice, zest, chopped dill, salt, and pepper until smooth and creamy.
