Smoked Salmon Bites with Dill & Capers


Ingredients (Serves 8-10 as an appetizer)

  • 1 French baguette, sliced into 20 thin rounds
  • 8 oz (225 g) cream cheese, softened
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh dill, finely chopped (plus extra sprigs for garnish)
  • 6 oz (170 g) smoked salmon, cut into small strips
  • 2 tbsp capers, rinsed and drained
  • 5-6 black olives, thinly sliced
  • 1 tbsp olive oil (optional, for brushing bread)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Prepare the Bread:
    • Preheat the oven to 375°F (190°C).
    • Arrange the baguette slices on a baking sheet. Brush with a light coating of olive oil if desired.
    • Toast for 6-8 minutes until golden and crisp. Let cool.
  2. Make the Cream Cheese Spread:
    • In a bowl, mix the softened cream cheese with lemon juice, zest, chopped dill, salt, and pepper until smooth and creamy.
  3. Assemble the Canapés:
    • Spread a generous layer of the cream cheese mixture onto each toasted baguette slice.
    • Top with a small fold of smoked salmon.
    • Garnish each canapé with a couple of capers, a slice of black olive, and a small sprig of fresh dill.
  4. Serve:
