Grilled Chicken & Blackberry Salad with Bacon, Feta, and Balsamic Glaze

Ingredients

For the Salad:

  • 2 boneless, skinless chicken breasts (Farm Fresh Northwest preferred)
  • Olive oil, salt, and pepper (for grilling)
  • 6 cups mixed spring greens or butter lettuce
  • 1 cup fresh blackberries
  • 4 slices cooked bacon, chopped or crumbled
  • 1/2 cup crumbled feta cheese
  • 2 green onions, sliced
  • Balsamic glaze (for drizzling)

Optional Add-ins:

  • Toasted pecans or walnuts for crunch
  • A few mint leaves for a refreshing twist
  • Avocado slices for richness

Instructions

  1. Grill the Chicken:
Preheat grill or grill pan to medium-high. Brush chicken with olive oil and season with salt and pepper. Grill 6โ€“7 minutes per side or until cooked through and juices run clear. Rest 5 minutes, then slice or chop into chunks.
  2. Assemble the Salad:
Arrange greens on a large platter or individual plates. Top with blackberries, grilled chicken, chopped bacon, feta, and green onions.
  3. Dress It:
Drizzle with balsamic glaze just before serving. Serve immediately.

Chefโ€™s Tips

  • Donโ€™t overdress โ€” balsamic glaze goes a long way with juicy fruit and salty cheese.
  • Grill your chicken ahead of time and chill โ€” this salad is just as good cold.
  • If you prefer a vinaigrette: Whisk 3 Tbsp olive oil, 1 Tbsp balsamic vinegar, 1 tsp honey, a pinch of salt, and cracked pepper.

Pairing Suggestions

  • Wine: Pinot Noir or dry rosรฉ
  • Mocktail: Blackberry basil spritzer
  • Bread: Crusty sourdough or grilled flatbread
