Whipped Feta with Roasted Strawberries
Ingredients
Whipped Feta
- 8 oz feta cheese (preferably block-style, not crumbled)
- 1/3 cup cream cheese (softened)
- 2–3 tablespoons olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon honey (optional, for balance)
Roasted Strawberries
- 1 pint strawberries, hulled and halved
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar
- 1 teaspoon brown sugar or honey
- Pinch of sea salt
- Fresh cracked black pepper, to taste
Topping
Additional balsamic glaze or reduction, for drizzling
Hand-torn fresh basil leaves

Instructions
1. Whip the Feta:
In a food processor, combine feta, cream cheese, lemon juice, and olive oil. Blend until smooth and creamy, scraping down sides as needed. Add a drizzle of honey if you prefer a touch of sweetness. Set aside or refrigerate until ready to use.
2. Roast the Strawberries:
Preheat oven to 375°F (190°C). Toss strawberries with olive oil, balsamic vinegar, sugar or honey, salt, and pepper. Spread on a parchment-lined baking sheet and roast for 15–20 minutes, until juicy and slightly caramelized.
3. Assemble:
Spread whipped feta in a shallow bowl or plate. Spoon warm strawberries and their juices over the top. Drizzle with more balsamic glaze and finish with fresh basil.
