Late-Season Apricot & Whipped Ricotta Toasts
Ingredients
- 4 slices of rustic country or sourdough bread, toasted
- 1 cup ricotta cheese (or substitute whipped goat cheese for a tangy twist)
- 3 ripe apricots, sliced
- 1 small cucumber, chopped
- 4–5 cherry tomatoes, halved
- Fresh basil leaves
- Drizzle of extra virgin olive oil
- Pinch of sea salt and cracked black pepper
- Optional: Black sesame seeds or crushed pistachios for garnish
Instructions
