Smoked Salmon and Guac Toast

Serves 4

Ingredients

  • 4 slices of artisanal bread – We use The Essential Baking Company
  • 2 ripe avocados
  • Juice of 1 lime
  • 1 small yellow onion, finely diced
  • 2 Roma tomatoes, seeded and diced
  • Handful of fresh cilantro leaves, chopped
  • Salt, to taste
  • 4 ounces smoked salmon
  • Micro greens, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the bread slices on a baking sheet and toast them in the oven for about 10 minutes or until they turn golden brown.
  3. Once toasted, remove the bread slices from the oven and rub each slice with a freshly cut garlic clove. This will infuse a subtle garlic flavor into the bread.
  4. In a bowl, mash the ripe avocados using a fork until desired consistency is reached.
  5. Squeeze the lime juice over the mashed avocados and stir well to combine.
  6. Add the finely diced yellow onion, Roma tomatoes, chopped cilantro, and a pinch of salt to the avocado mixture. Mix until all the ingredients are well incorporated.
  7. Take each garlic-rubbed bread slice and spread a generous amount of guacamole on top.
  8. Lay a few slices of smoked salmon over the guacamole on each bread slice.
  9. Garnish with micro greens for a fresh touch.
  10. Serve the Smoked Salmon and Guac Toast immediately, and enjoy!
